MEXICAN COOKING FOR GRINGOS

FILET ( o SOLE mio )  AU GARLIC.

A simple dish with lots of flavor, which is prepared quickly. FOR 6 SERVINGS 6 fish fillets Salt to taste Pepper, to taste 1 lemon, juiced 2 sprigs parsley, chopped 4 cloves garlic, thinly sliced Oil canola, to taste 30 MINUTES PREPARATION Season the fish fillets and dip them in lemon juice. Marinate 15 minutes. While marinated, chopped parsley, and cut the garlic into thin slices. Heat oil in a skillet and add garlic. Cook on medium until light brown. With a Ladle, remove the garlic .   Fry the fish fillets in the same oil, half light, on both sides, about two minutes per side. Serve on a plate, sprinkled with parsley, Then add the  ( pretty ones ) Garlic slices , Serve with white rice, lettuce and sliced lemons for decoration .

CHILAQUILES

( This is an undisclosed recipe from the White House’s Kitchen

of  Mister President B.Obama favorite’s Breakfast .I apologize for

the poor quality of this picture of “Chilaquiles” , obviously , it was

extracted from a Surveillance Camera  System .)

Ingredients  :

Olive oil

8 Corn tortillas cut into triangles

½ cup  green tomatillos or red tomatos  sauce (made with tomatoes, garlic , hot green peppers and salt )

¼ onion finely chopped

¼ cup sour cream  ( maybe more )

¼ cup your favorite cheese (  Feta Cheese…..Strongly recommended )

PREPARATION 10 MINUTES (  maybe more )

Heat the olive oil in a skillet open. Fry tortillas, turning frequently with a ladle.   Continue until golden brown but not burned.

Pour sauce add ½ cup of water, add finely chopped onion and cover. Simmer.

After 10 minutes add cheese. Cover.  Continue Simmer.  ( DO NOT PEEP )

Uncover.  Divide in Four . Pour Sour Cream on each part.

Serve and enjoy it !

P.S.  .- It is very important to know that this particular dish taste better

              when the sauce it’s more “Picante”  (spicy) . As we were informed

              by confidential sources, the Ambassador of Thailandia was invited

              for Breakfast one Saturday, with the condition of bringing his own

             Thai peppers, they said, in spite of  the  “CHILAQUILES ” being  

             HOT , Mr.Obama enjoyed it, (  He liked the Challenge )  rumor

             continued, that  the Foreign guest went personnally to the kitchen

             to congratulate  the Chefs and handled one hundred dollar bills

             in exchange for the ” CHILAQUILES ”  ( Secret )  Recipe .

SPAGHETTI A LA MESSICANA MAMMA MIA.

MEXICAN COOKING FOR GRINGOS   PRESENTS :

 

MAMMA MIA’S SPAGHETTI A LA MESSICANA

( Yes, my mother’s recipe )

Ingredients :

1 pound spaghetti
1/4 pound Romano cheese, grated
1/4 pound shredded mozzarella cheese
1/4 pound shredded provolone cheese
1/2 cup butter melted
1 pinch garlic powder
1/2 cup of chopped fresh parsley leaves
Crushed red pepper flakes ( Optional)

Directions :

In a large pot of lightly salted boiling water, cook the spaghetti 8 to 10 minutes, until al dente, and drain.

Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium casserole dish with butter mixed with garlic powder. Mix Romano , mozzarella and provolone cheeses separately .

Cover the bottom of the prepared dish with 1/3 of the cooked spaghetti, top with 1/3 of the cheese mixture, Repeat layering. Be sure to end with cheese on top.

Bake 30 minutes in the preheated oven, until cheese is bubbly and lightly golden brown.

Before serving on the table, scatter on top with generous ammount
of chopped fresh parsley.

Set on the table crushed red pepper flakes. ( Optional )
